I have been nicking donated, easy, preferably one-pot recipes to suggest to my husband who is chief cook and bottle-washer. (Love him!)

Any ideas?

I am looking for recipes for one-pot dishes with the main ingredient being sweet-potato. Any sweet-potato fans?

I usually do this in an aluminium "caldero" - that´s basically a stewpot in Spanish. It´s basically a sweet potato and lentil "sambhar", or stew, with the added glory of cabbage.

Spiced dal with sweet potato and cabbage (serves 4)

2 tbsp oil or ghee
1 large onion, chopped
4 garlic cloves, crushed
2 tbsp sambhar powder or good quality curry powder
1 tbsp garam masala
2 large sweet potatoes, peeled and cut into small pieces
300g red lentils or (even better) toor dal
2 medium tomatoes, diced
Bunch of fresh coriander, chopped
1350ml vegetable stock
150g baby white cabbage, cut into squares
Salt to taste
Black pepper

1.Cook the onion in oil until it wilts. Add the garlic then, 2 minutes later, add the spices. Cook for one or two minutes. Add the sweet potato and cook for 5 minutes, until the potato is well coated in the spices.
2.Add the lentils, cabbage, vegetable stock and a handful of chopped coriander, and cook for 20 minutes partially covered, until the lentils are almost done. Now add the chopped tomatoes and cook for 5-10 minutes more. The lentils should be soft and the cabbage, creamy smooth. Check for seasoning.
3. Sprinkle with black pepper and serve.

Use sweet potatoes instead of normal for baked potatoes.

microwave your sweet potatoes till soft. Roughly chop/crush to desired consistency then add feta olives,toasted seeds etc

Curries are good or sub mince with sweet potato in a standard chilli recipe .

Nice with lime and chilli butter too.

I sometimes make a gratin with them - some creme fraiche, chilli, garlic. Mix with ordinary potatoes if too sweet for your tastes.

I once made, and liked, Hugh F-W's sweet potato and peanut thing, but it's very rich.

I have no idea if it’s any good, but I’ve just bought a sweet potato recipe book for my son. And others from the same series for other family members. ( plus a sweet potato, or Yorkshire halloumi, tofu or avocado to match :D ). :D

Google Turkish halloumi too, with red lentils....it’s very good.
